Ingredients
- 1 can black beans, drained & rinsed
- 1/2 can corn, drained
- 1 lg. tomato, chopped
- 1/2 lg. avocado, diced
- 1/4 med. red onion, chopped
- 1/8 cup fresh cilantro, chopped
- 1 jalapeno, seeded & chopped
Dressing:
- 1/2 Tbsp. red wine vinegar
- 2 Tbsp. lime juice
- 1 Tbsp. olive oil
- 1/2 tbs salt
- 1/4 tsp pepper
Directions
Combine all ingredients.
Cover and Chill.
Serve with tortilla chips, pita bread, or desired pearings.
