Roniece Weaver, MS, RD, LD
Founding Partner, Director of Agency Operations
Roniece is a founding partner and Director of Agency Operations for Hebni Nutrition Consultants, a creator of the original Soul Food Pyramid and the Soul Food Plate, culturally sensitive food educational tools. Mrs. Weaver and her team are closely connected to delivering a variety of health models to underserved communities living in food deserts.
Mrs. Weaver provides educational seminars to many health care organizations across the country. She was awarded her B.S. in Food Science/Human Nutrition from the University of Florida, and received a Master of Science in Health Care Administration from the University of Saint Francis.

Fabiola Gaines, RD, LD
Founding Partner, Director of Nutrition Services
Fabiola is a founding partner who currently serves as the Director of Nutrition Services for Hebni Nutrition Consultants, Inc. Along with Roniece Weaver, Ms. Gaines has co-authored several wellness books. “The New Soul Food Cookbook for People with Diabetes”, “Slim Down Sister”, “Month of Meals,” Family Style Soul Food, Healthy Soul Food, and their newest 3rd edition book to be released soon with the American Diabetes Association.

Ellareetha Carson, RD, LD
Founding Partner, Senior Dietitian (Retired)
Ellareetha (Ms. Ellie) is a founding partner of Hebni Nutrition Consultants, Inc., a developer of the original Soul Food Pyramid and the Soul Food Plate, a culturally sensitive food guide and educational tool. Ms. Ellie provided support and guidance to Hebni in its infancy and growing years. She brought over 58 years of wellness experience and assisted with providing a myriad of wellness programs to Central Florida.

Glen R. Providence, MS
Executive Director

Glen R. Providence serves as the Executive Director for Hebni Nutrition Consultants, Inc. In his role, he is responsible for agency leadership, fundraising and development support, marketing, and agency growth. Mr. Providence has B.A. in Communications from the University of Minnesota, Duluth, and has an M.S. in Organizational Leadership from St. Bonaventure University.
Nutrition Program Manager
Celines Martinez, MS, RDN/LDN

Celines Martinez is a Registered Dietitian at Hebni responsible for data collection analysis of community health and nutrition projects. In addition, Celines facilitates nutrition education programming and content in Spanish and English to better meet the needs of our diverse community. In addition to her B.S. in Molecular Biology from the University of Central Florida, Celines also holds a M.S. in Nutrition and Dietetics from Florida International University and an A.S. in Culinary Arts.
Lindy Snyder, MS
Grants Manager

Lindy Snyder serves as the Grants Manager for Hebni Nutrition Consultants, Inc. In her role, she is primarily responsible for securing program and operational funds through grant writing activities. Ms. Snyder also assists with program development, budgets, and evaluation strategies. Ms. Snyder has a B.A. in Liberal Arts from the University of Central Florida, and a Master’s Degree in Public Administration from the University of Central Florida. Mrs. Snyder has been working with Hebni since 1996.

Thomas Coston

Thomas Coston serves as the Market Manager for Fresh Stop, Hebni’s mobile farmer’s market. Thomas earned a J.U.C.O. basketball scholarship at Florida Gateway College in Lake City, FL where he earned an A.S. degree in Criminal Justice. Thomas has experienced success in operations, sales, and marketing as a mid-level manager at the independent and corporate level. He excels at building positive client relationships, operations, and executing growth strategies.
Natasha Dial, MPH
Office Manager

Natasha Dial is the Office Manager of the HEBNI team. She has over a decade of experience in health education, data management, and program implementation/evaluation. Throughout her career, she has worked with for-profit and not-for-profit organizations. Natasha’s career in public health began as part of an internship with the Florida Department of Health - Orange County, where she served diverse populations educating them about health and reducing risk factors for chronic diseases to improve health outcomes. In her role, she oversees bookkeeping, payroll, grant reporting, in addition to assisting with day-to-day agency operations. She holds a B.A. in Psychology from Florida State University and a Master’s in Public Health from Walden University.

Aixa Gonzalez

Aixa Gonzalez is the Volunteer Coordinator and Community Outreach Coordinator for both Hebni and The Fresh Stop Bus. Aixa recently graduated from UCF with a Bachelor's in Psychology and is attaining her Masters in Clinical Social Work. Aixa’s experience in the nonprofit world began with a Public Allies apprenticeship, serving 1700 hours in 10 months. In her role, she creates and organizes volunteer events according to the needs of both organizations and participates in community events to spread awareness about the programs we offer.
Maya Sumair
Executive Assistant

Maya is the executive assistant for Hebni Nutrition. Her responsibilities include managing emails and phone calls; organizing documents; conducting meeting minutes, and any additional administrative duties aiding the Executive Director in their role. Maya earned her B.S. degree in Health Sciences- Health Promotion Track at the University of Central Florida. During her studies at the undergraduate level, she had the privilege to successfully complete Research-Intensive courses which allowed her to participate in research development. She is now pursuing her studies in dietetics and nutrition at the University of Alabama, intending to earn a M.S. in Human Nutrition.
Brandon Salazar
Marketing Coordinator

Brandon Salazar is the Marketing Coordinator for Hebni Nutrition and The Fresh Stop Bus and is responsible for developing different marketing materials and campaigns for the organizations. Brandon has multiple years of leadership and marketing experience, as well as an extensive background in photography and videography. Brandon is currently pursuing a B.A. in Liberal Arts from the University of Central Florida.
Amanda Mahaleris, MS, RDN/LDN

Amanda Mahaleris is a Registered Dietitian Nutritionist at Hebni Nutrition Consultants Inc. With a special interest in community nutrition, Amanda aims to help individuals of all ages reduce their risk for preventable chronic illness through dietary changes by educating using science-based information. Amanda holds a B.S. in Communication Sciences and Disorders from the University of Central Florida and worked in the public-school system before attaining a M.S. in Human Nutrition from the University of Alabama.

Fresh Stop & Veggie Rx Ambassador

Karena Bridgelal is our Fresh Stop & Veggie RX Ambassador, working alongside our Community Outreach Coordinator to pioneer Hebni’s Community Health Worker Program and connect local communities with Hebni’s resources. Through her 10-month internship with Public Allies, Karena is dedicating 1,700 hours to advancing Hebni’s mission. A UCF graduate with a B.S. degree in Clinical Psychology, Karena is now diving into clinical herbalism, blending her love for holistic health and community impact into everything she does.

Abigail Remy Wnuk is the Nutrition Ambassador for Hebni Nutrition Consultants, Inc. Abigail recently graduated from Florida State University with a B.A. degree in Food and Nutrition Science. Abigail's love for nutrition education and non-profit work began in her role as a Nutrition Educator with Second Harvest of the Big Bend. She is a hopeful future registered dietician who is passionate about the field of nutrition. In her role with Hebni Nutrition, she provides nutrition education by hosting nutrition support groups, leading cooking demonstrations, and assisting with the KYDS program.
