Pizza Pinwheels

A new and fun way to eat pizza!

Ingredients

  • 1 (8-ounce) can of refrigerated reduced-fat crescent roll dough
  • 2 cups shredded part-skim mozzarella cheese
  • 24 slices of turkey pepperoni
  • 1 (14-ounce) can of reduced sodium pizza sauce

Directions

  • Preheat oven to 375 degrees F (190 degrees Celsius)
  • On a large baking sheet, pinch the 8 crescent roll dough triangles into 4 rectangles. Layer each rectangle with 6 slices of pepperoni and even amounts of mozzarella cheese. Roll tightly lengthwise and slice each into 4 or more pieces.
  • Bake in the preheated oven until golden brown, about 12 minutes. Serve with pizza sauce for dipping.

 

Turkey Pinwheels

As simple as making a sandwich!

Ingredients

  • 1 large whole wheat tortilla
  • 1 natural cheese slice, torn in half (Swiss, provolone, mozzarella, cheddar)
  • 3 to 4 thin slices of turkey
  • Spinach or mixed greens
  • Tomato
  • Reduced-fat cream cheese or hummus
  • Cucumbers
  • Optional ingredients: onions, dill, mayonnaise, ranch, olives, everything seasoning

Directions

  • Lay tortilla flat
  • Add the remaining ingredients on top of each other, in this order: spread, cheese, spinach, and/or mixed greens, turkey, tomato, and cucumbers. Try to keep everything in a line from one side of the tortilla to the other.
  • Starting at the bottom, roll the tortilla up tightly. Trim off ends.
  • Secure with toothpicks, spaced out as evenly apart as possible.
  • Cut in between toothpicks with a knife.

Note: The toothpicks can be removed as long as the pinwheels haven’t been overstuffed and they’re going to be arranged on something like a platter. Otherwise, we suggest leaving the toothpicks in.

 

Air-Fried Fish

Golden, crispy, and delicious!

Ingredients

  • 1 lb. fish of your choice
  • Kosher Salt
  • Freshly ground black pepper
  • 1/2 cup all-purpose flour
  • 1 large egg
  • 2 cups panko bread crumbs
  • 1 tsp old bay seasoning
  • Lemon wedges, for serving
  • Tartar sauce, for serving

Directions

  • Pat fish dry and season on both sides with salt and pepper.
  • Place flour, egg, and panko separately in three shallow bowls. Add old bay to panko and toss to combine.
  • Working one at a time, coat fish in flour, then in egg, and finally in panko, pressing to coat.
  • Working in batches, place fish in the basket of air fryer and cook at 400 F for 10-12 minutes, gently flipping halfway through, or until fish is golden and flakes easily with a fork.
  • Serve with lemon wedges and tartar sauce.

 

Marinated Black Bean Salad

Healthy and delicious Southern recipe!

Ingredients

  • 3 oz lime juice
  • 1 tsp dried parsley
  • 1/2 tsp ground cumin
  • 1 tsp or 1/4 oz fresh garlic cloves
  • 2 tsp or 1/3 oz ancho chili powder OR 2 tsp tagin low sodium Mexican seasoning mix.
  • 1/2 cup or 1/3 oz fresh cilantro, minced
  • 1 tsp or 1/4 oz olive oil
  • 1/8 cup or 2 oz honey
  • 1/4 cup or 2 oz apple cider vinegar
  • 1 - 15.5 oz canned low-sodium black
  • beans, drained, rinsed.
  • 1 1/2 cup or 8 oz frozen whole-kernel corn, thawed
  • 1/3 cup or 1 1/3 fresh green peppers, diced
  • 1/2 cup or 2 oz fresh red peppers, diced
  • 1/3 cup or 3 1/3 oz canned low-sodium salsa
  • 1/4 cup or 1/2 oz fresh red onions, diced
  • 1/4 cup or 1/4 oz jalapeños, diced, seeded
  • 1/2 cup cojita cheese (optional)

Directions

  • Dressing: combine lime juice, parsley, cumin, garlic, ancho chili powder, cilantro, olive oil, honey, and apple cider vinegar. Stir well. Set aside for step 3.
  • Vegetables: combine black beans, corn green peppers, red peppers, salsa, onions, and jalapeños in a large bowl. Stir well. Set aside for step 3.
  • Pour about 4 1/2 oz (1/2 cup) dressing over 1 lb 11 oz (4 1/2 oz) vegetables. Stir well.
  • Transfer about 2 lb 1 oz (1 qt) bean salad to a medium serving bowl.
  • Sprinkle about 2 oz (1/2 cup) cheese over the final mixture.
  • Cool to 40 F or lower within 4 hours. Hold at 40 F or below.
  • Portion 2/3 cup.
