Warm Sweet Potato Salad with an Orange Vinagrette

Ingredients for 6 servings:

2 lb. sweet potatoes (peeled and cut into 3/4-inch cubes)

1 Tbsp. extra-virgin olive oil (for sweet potatoes)

1/2 tsp. ground cumin

3/4 tsp. salt (for sweet potatoes)

1/4 tsp. black pepper

1/2 orange (juiced, for dressing)

1 Tbsp. extra virgin olive oil (or sunflower oil, for dressing)

1 Tbsp. apple cider vinegar

1 1/2 tsp. honey (plus more if desired)

1/4 tsp. salt (plus more if desired, for dressing)

1 dash cayenne

1/2 orange (peeled and roughly chopped, for topping)

2 Tbsp. dried cranberries

1/4 cup crumbled goat cheese  - OPTIONAL

1 scallion (minced)

2 Tbsp. toasted pine nuts (optional)



  1. Peel and cut your sweet potatoes in 3/4-inch cubes and place in a large skillet on medium-high heat. Pour your extra-virgin olive oil, ground cumin, salt, and black pepper onto the sweet potatoes. Sauté for about 10-12 minutes stirring throughout. The sweet. potatoes should be cooked through. 
  2. For the dressing mix your orange juice, extra-virgin olive oil, apple cider vinegar, honey, salt, and cayenne together.
  3. Pour the dressing over your sweet potatoes and mix thoroughly.
  4. Mix in the orange, goat cheese, scallion, and toasted pine nuts. Enjoy!
