Stuffed Bell Peppers

Ingredients

  • 2 bell peppers
  • 1 onion, diced
  • 1 carrot, diced
  • 1 cup kale, chopped
  • ½ cup pasta sauce
  • 1 cup brown rice

Instructions

  1. Cut the top off the bell pepper and remove the seeds.
  2. Saute onion, carrots, and kale for 5 minutes until soft. Season with Salt and Pepper.
  3. Add in brown rice and pasta sauce. Cook until heated through for about 5 minutes.
  4. Add rice and vegetable mixture into bell peppers.
  5. Bake bell peppers for 10-15 minutes at 350 degrees Fahrenheit.

Things to consider about this recipe: 

  • Bell peppers contain vitamins C and E as well as beta-carotene, which help protect against heart disease and some cancers.They are also high in fibers that can help with digestion and prevent constipation
  • Too much bell peppers can actually cause gas or bloating due to the high fiber contents within them.
