- 2 bell peppers
- 1 onion, diced
- 1 carrot, diced
- 1 cup kale, chopped
- ½ cup pasta sauce
- 1 cup brown rice
- Cut the top off the bell pepper and remove the seeds.
- Saute onion, carrots, and kale for 5 minutes until soft. Season with Salt and Pepper.
- Add in brown rice and pasta sauce. Cook until heated through for about 5 minutes.
- Add rice and vegetable mixture into bell peppers.
- Bake bell peppers for 10-15 minutes at 350 degrees Fahrenheit.
